Bean-Less Chili



3 celery stalks diced
1/2 med white onion, diced
3 cloves of fresh garlic minced
4 TBS extra-virgin olive oil
1lb grass-fed beef
1lb mild Italian chicken sausage, casing removed
1 tsp sea salt
2 TBS Italian seasoning
1/2 TBS cumin
2 TBS chili powder
1/2 tsp cayenne pepper (more if you want it spicy)
1 (16oz) can diced tomatoes with juice
8-16 oz chicken broth (8 if you want it thick, 16 for more soup consistency 


In a med soup pot saute the veggies in the olive oil for 2 minutes, add beef and sausage, and brown


Season the meat mixture with all the spices
Add the tomatoes and chicken broth, and simmer for 35 min
Taste and add more seasoning if desired


I had this over some spaghetti squash for dinner last night and it was 
SO GOOD!!

Whole30 Week 1: Jan2-Jan6

I've completed my first week of my Whole30.
 It wasn't a complete week since I started on January 2nd and not the 1st. 
Here is my meal plan and a few pictures from each day my favorite meals.

Egg muffins and grapes
Day 1: Jan 2
B: 3 Egg muffins, grapes
L: Salad with boiled eggs, avocado and orange bell pepper
S: Almonds
D: Chipotle Bowl with Chicken, fresh salsa guacamole and lettuce

Spaghetti squash with sauce,
 roasted asparagus and grapes
Day 2: Jan 3
B: 2 Egg muffins, 1/2 avocado, 1/2 Granny Smith apple
S: Raw almond butter and 1/2 Granny Smith apple
L: Salad, with 1/2 avocado, 3 slices of turkey, and orange bell pepper
D: Spaghetti squash with meat maranara, roasted asparagus and grapes
S: Fuji Apple

Salad with turkey, orange bell pepper
and avocado
Day 3: Jan 4
B: 2 Egg Muffin 1/2 avocado 1/2 c blackberries
S: Raw almonds and pink lady apple
L: Salad with Turkey, avocado, and orange bell pepper
D: Spaghetti squash with meat sauce

Egg muffins, grapes and 1/2 avocado

Day 4: Jan 5
B 2 egg muffins, 1/2 avocado and  1/2 c grapes
S: Unsweetened apple sauce and raw almonds
L:
Dinner: Salad with Chicken, avocado, bell pepper

Chipotle Bowl, chicken, salsa, guacamole
and lots of lettuce
Day 5: Jan 6
B: 2 Egg muffins
S: Pink Lady Apple and raw almonds
L: Chipotle Bowl, chicken, salsa, guacamole and lettuce
D: Chicken thigh leftover asparagus
S: Avocado

Egg Muffin

Since starting my Whole30 I heavily rely on cooking ahead and in bulk. I don't know if its the pregnancy or having 2 two year olds (David turns 3 in 10 days!) or the combination of the two. Whatever it is the thought of making breakfast every morning sounds AWEFUL! 

Cue


10-12 eggs
2 zucchini diced finely
2 cups spinach, chopped
7 slices of bacon, cooked and crumbled
4 green onions, diced
1 red bell pepper, diced
Sea salt and ground pepper (to your liking)

Preheat your oven to 350 degrees
Simply combine all ingredients in a med bowl
Grease muffin tin with coconut or olive oil. 
Using a 1/3c measuring cup fill each well, should be a little more than 1/2 full
Bake for 20-25 min till set and brown around the edges
Yields about 18 muffins
I have 2-3 for breakfast with some fruit, or sliced avocado

Complete Whole30{hope to post recipes along the way}
Plan meal 2 weeks at a time
Complete Organizing Made fun de-clutter challenges

10 Post this month
Arrange a guest post {let me know if you'd like to, never had a guest haven't a clue!!!}
Keep Office hours {weekday 6am-8am and 8pm-9pm weekends 3hr max whenever} this month will be trial and error on this one!

Financial:
Make Jan budget and input EVERY DOLLAR SPENT!!!
Review on the 1/15 and 1/29

This is a lot better than looking at all the goals at once!

2012 Goal Recap



After getting Money Saving Mom faithful emails about her goals for 2012, 
it made me think back to the goals I had made for 2012.
 Needless to say I fell short. Very short. But I'm not beating myself up about it. 

Do: 
Finish the boys dresser
Prepare 8-12 freezer meals a week ( I did this for about the first 5 months) 
Refinish/paint TV stand
Sew curtains for the garage door window
Have a garage sale
Organize the garage ( started but didn't finish) 
Plan a stay-cation with my husband 
Explore museums in the summer
Make ornaments for the Jesse Tree/ Do the Jesse Tree (Didn't even come close)
Go to Canton with girlfriends
Fill to operation Christmas Child boxes
Host a Christmas Party ( Had a Thanksgiving Potluck instead) 

Read: 
I had plan to read a book a month. I only read 3 from my list and several others 

Learn: 
Memorize James, and 1 Peter. 

Be: 
I had an attribute a month I was to work on. To be honest I didn't get past March. 

Most of the lack of progress is due to getting pregnant with boy number three, and loads of exhaustion. Which is why I haven't even been on my blog much. Sorry to my 6 readers! 

However I plan to do better in 2013! Stay tune to those goals coming Tuesday

31 Days of Clean: the Reboot


And I need a reboot BADLY!

My whole house isn't out of control after all I did day I was more of a Martha type.
However I have about three areas of my home that are a
DISASTER!!! 

If my font would go bigger I'd make it so. 
Now I am going to show you my three areas

Area 1. The breakfast nook
Our nook is literally that a nook. 
A table for 4 would NEVER fit in this space
So it is our catch all area. Here is my desk. Notice all the clear space on top!
NOT!!! 
Yes this is piles of paper that I need to keep 
but haven't found (made time to find) a system that works for me
This is the other side of the 'nook', notice several things that don't belong?
Let me name them; bassinet, magazine rack leaning on the wall vs hanging on the wall, chair cushion, multiple bags not on hooks. Need I say more!

Area 2. My hall closet/hubs closet
So this is the catch all closet,
 in a sec you will see my bedroom closet which will explain why my dear hubs has to have his clothes here and not in our bedroom closet. 

Area 3. My bedroom closet

OK, you know I love you because I am showing you the messiest areas of my house.
No judgement!
So yes it is TINY! Thats what happens when you live in a 2bed/1bath house build in the 60's
very few closets that are SMALL. What's a girl to do?


And because one picture isn't enough to show you the disaster here are 2 more


Yes, yes I know it's bad, but that's what this month is for!

{Part 1} At home with Mary and Martha


The key to unlocking the mystery of Mary and Martha is Balance


If you are a christian woman the topic of Mary vs Martha comes up often. Friday a very wise women from our church spoke to a room full of moms of preschoolers about this very topic. 


Luke 10:38-42
Now as they went on their way, Jesus entered a villiage. And a woman named Martha welcomed him into her house. And she had a sister named Mary, who sat at the Lord's feet and listened to his teaching. But Martha was distracted with much serving. And she went up to him and said, "Lord, do you not care that my sister has left me to serve alone? Tell her then to help me." But the Lord answered her, "Martha, Martha, you are anxious and troubled about many things, but one thins is necessary. Mary has chosen the good portion, which will not be taken away from her."

For me at my core I am a Martha. I'm all about getting things done, efficiency and perfection. Now even this is at my core you could come to my home and think otherwise. But it is who I am. It can be hard to combat that when you have passages like Proverbs 31 where we see all the things that she does!

An excellent wife who can find ?
She is far more precious than jewels
The heart of her husband trust in her,
and he will have no lack of gain.
She does him good, and not harm
all the days of her life.
She seeks wool and flax 
and works with willing hands
She is like the ships of the merchant;
she brings her food from afar.
She rises while it is yet night
and provides food for her household
and a portion for her (house)maidens
She considers a field and buys it;
with the fruit of her hands she plants a vineyard.
She dresses herself with strength 
and makes her arms strong.
She perceives that her merchandise is profitable.
Her lamp does not go out at night
She puts her hands to the distaff
and her hands hold the spindle.
She opens her hands to the poor 
and she is not afraid of snow for her household,
for all her household are clothed in scarlet. 
She makes bed coverings for herself;
her clothing is fine linen and purple.
Her husband is known in the gates 
when he sits among the elders of the land
She makes linen garments and sells them; 
she delivers sashes to the merchant.
Strength and dignity are her clothing.

I don't know about you but I am exhausted just reading all that she does. Its hard not to think that is all are jobs as wives and mothers entail. But there is more to it. 
Now to clarify as Holly said, there are tasks that have to be done. Unless you are keep a secret from the rest of us wives and mothers we all have 'to do' list.

cooking
shopping
teaching
training
These things don't do themselves but our hearts attitude about it speaks volumes

All of these things the Mary heart and the Martha hands take BALANCE

B- Be simple;
There is a time for everything and a season for every activity under the heavens Ecclesiastes 3:1
As a mom of a preschooler I have to remember that every idea I come across on google or pinterest

A- Allow for margin; 
If you know that it take 15 min to get your family from the door to the car and 15 minutes to get to where you need to go but only allow yourself exactly 30 minutes you are going to be late. Because we all know that everyone needs to go to the bathroom at the last second or someone can't find their shoe. But if you allow yourself 45 minutes you will more than likely be on time if not early.

L- Line up with Christ's priorities;
but seek first His kingdom and His righteousness, and all these things will be given to you as well. Matthew 22:39

A- Ask the Lord for wisdom in your personal decisions about time and priorities. Satan wants you to believe you can do this without God! If any of you lacks wisdom, he should ask God, who gives generously to al without finding fault, and it will be given to him. James 1:5

N-Never put project before people:
and the second are like it: 'Love your neighbor as yourself' Matthew 22:39.  Tasks should NEVER be more important than my husbands, my boys, my family or my friends

C- Commitments:
What is important vs extra? Only you and your husband can make this decision. Don't base what you do on what your friend, sister or mother is doing!

E- Excellence DOES NOT EQUAL perfection. Now repeat that 10 times throughout your day!

February Goal Update

Having to write all this down shows me that I am not being diligent in certain areas of my life and that isn't ok. Being accountable to the blog world is helpful, but I am thinking a live person would be better.


do:
I finished the dresser I was suppose to do in January {just need cute sport knobs}
I completed the 12 freezer meals
I listed 6 things Ebay and sold 5 all {this wasn't on the original list}!
Didn't even touch the TV stand. Guess this being bumped back to March!

read:
So my list has The Power of a Praying® Parent Deluxe Edition
 Well for whatever reason it has sat on my shelf all month. I did start it on Saturday so it will be my March reading and maybe I will start The Money Saving Mom's Budget: Slash Your Spending, Pay Down Your Debt, Streamline Your Life, and Save Thousands a Year at the same time. I really enjoy reading books but for some reason I can't get my act together with making the time for reading them!


memorize:

James is coming along nicely. I did memorize the next 12 verses of chapter 1. So I am pretty good through verses 25


be:
Can you see a theme{ not doing what is on my goal post?}. I haven't been intentional with my gentleness challenge. I feel this will be an ongoing thing. But I must get this under control! The Lord is my strength and through Him I will

So January has been a whirlwind! I can't believe tomorrow is February! Way too soon. Anyway I am pretty proud of how much I have accomplished this month
  • The boys dresser: as of now finished the dresser. I need to find some knobs and a second coat of poly and we will be good to go. 
  • Post 2 items on Craigslist/Ebay: I posted about 12 things and sold half! Yay!!!
  • 8 Freezer meals: I did 4 dinners and 4 breakfast. Very helpful for the hubs for me to have breakfast muffins in the freezer for him to grab early in the morning. 
  • Read Sheet Music: Done, did this with our community group. Nothing like challenging each other to pursue intimacy with their spouse!
  • Memorize James 1:1-12: Pretty good need a few helps but overall got it down
  • Quiet: I have won and lost that battle this month. I have to say the last week has been very rewarding in thinking before I speak. I know my husband appreciates this!

Personal Goals for 2012

So I have been inspired by Mandy over at Biblical Homemaking to have categories for my personal goals. I too need accountability. Do this has helped me think beyond my wants and focus on what the Lord wants from me this year. Mandy I loved your categories so I am using the same ones I think they are great!
Here are my categories for personal goals in 2012:

do:
These are any tasks I want to accomplish. I am sure that I will tweak these as the year goes on seeing how I cant predict my whole year. I just know that this category is a place to put the things that I would live to accomplish in 2012. My goal is to keep you guys posted on a monthly bases!

read:
I love to read, however 2 boys two and under makes it very difficult to accomplish this love of mine. My desire is to use this area to help me prioritize my time so that I can get back to reading regularly. A book a month will ROCK!

learn:
My bible study group at church encourages us to learn a portion of scripture per semester. I have never diligently applied myself but this year I plan to do just that. I remember doing AWANA as a child and learning lots of scripture. I love that I can still recall most of those verses. However at 26 I should have a bigger bank of verses that I can recall at any given moment to encourage, and equip myself and othersI went to Christian schools as a child and was required to memorize lots of Bible verses. My goal is to memorize all of James this year. Bible study started with just chapter 1 but I want to have the whole book in my head and heart.

be:
As a believer of the Lord Jesus Christ my behavior is what the world sees sometimes before I even open my mouth. My character is a representation of what I believe. How I talk, act and treat others is a reflection of Christ. I want others to see Him in me. I am unable to do this alone. Only the Holy Spirt can give me the strength to become more Christ like  and change my heart towards Him. My prayer is for me to be open and obedient to His leading and His calling so that I can become more and more like Christ. I hope that through this project it will help me to see my shortcomings and sinfulness- the ones I can see {admit too} and those I don’t.
