This chicken is so yummy I love the bread like coating. It is now in the meal planing rotation and the boys love it. So I am excited to share it will you! If you make it let me know what the family says!
2 lbs boneless, skinless chicken thigh
1/2 c. almond flour
1/2c. coconut flour
1 tsp salt
2 tsp pepper
1 egg
In a 9x13 baking dish coat the bottom with olive oil
In a med bowl mix the flours, salt and pepper till combined
In a separate bowl beat the egg.
Dip the chicken in to the egg, then roll in the flour mixture till well coated
Place in baking dish and bake for 28-33 minutes, till juice run clear when cut into.
These fries are a favorite in our home. I eat them sparingly, but my boys LOVE them!
2-3 sweet potatoes, cut into spears
3 TBSP Coconut oil
1 tsp sweet paprika
1 tsp cinnamon
In a large bowl combine oil, cinnamon and paprika
Toss sweet potatoes in the mixture
Pour sweet potatoes on to a foil lined cookie sheet
Bake for 15-18 minutes at 375 degrees F.
