This morning a made a yummy breakfast, a baked oatmeal.
So healthy and great for fall and winter.
Caledon Baked Oatmeal
2 cups old fashioned oats
2 cups, low-fat, skim or soy milk
(I used almond milk)

1/2 tsp. best quality vanilla
1/2 c. slivered almonds
1/2 dried cranberries or other dried fruit of your choice
1 large unpeeled MacIntosh apple, grated, apple should be firm
4 Tbsp maple syrup
( I didn't have the maple syrup, so I sub. organic light brown sugar)

Cooking spray
1. Preheat oven to 400 degrees F, coat a 3 quart casserole dish or baking pan with cooking spray.
All ready for the oven, looks good unbaked!
2. Combine all ingredients in a large bowl. If you are preparing the night before don't add the liquid ingredients such as milk and apples until morning
3. Place mixture in casserole dish. Bake uncovered for 35-45 minutes
